A Sweet Slice of History: ANZAC Biscuits

Ingredients:
1 cup rolled oats
1 cup flour
1 cup desiccated coconut
3/4 cup sugar
125 g butter (sub for a diary free butter)
2 tbsp golden syrup
1/2 tsp baking soda
2 tbsp boiling water


Instructions:
Heat your oven to 180°C and line a baking tray with some baking paper.
Throw together your oats, flour, coconut, and sugar in a big bowl.
Melt the butter with the golden syrup in a pot on low heat – keep it gentle!
Dissolve the baking soda in boiling water and add it to the buttery syrup mix – it'll fizz up like a science experiment!
Tip the wet mix into the dry, give it a hearty stir, but don't stress about lumps.
Shape tablespoons of the mixture into balls, plop them on the tray, and press them down lightly.
Bake for around 10-12 minutes until they're beautifully golden.
Let them cool on the tray before moving them to a wire rack.
